I had more yukon gold potatoes than I knew what to do with after making faux veal stew (I used turkey tenderloin in place of veal). I figured it couldn’t hurt to try roasted potato slices, since I frequently roast asparagus as a side dish, and make my own fresh pasta sauce with roasted tomatoes.
During dinner, Hubsters exclaimed: “I hope you’re planning to blog about these – they’re amazing!”
And my 3 year-old emphatically stated that we should have garlic potato slices for dinner every night.
What’s the magic ingredient?
Johnny’s Garlic Spread Seasoning that I discovered during a Costco run. Gotta love those samples!
DIRECTIONS
–After scrubbing and slicing up potatoes, coat them with generous amounts of both olive oil and garlic seasoning, using a small bowl.
–Transfer the potato slices to a roasting pan.
–Bake at 400 for ~16-20 minutes total, flipping the potatoes half-way through cooking time.
–Adjust time as necessary depending on how thick your potato slices are and how crispy or tender you like them. The ones pictured here turned out with a crispy outside and creamy inside – yum!
Serve alongside a big Greek salad and grilled chicken (or whatever you fancy for dinner)!
Enjoy!
These were awesome and my son keep asking for them days afterwards. Thumbs up!!
